Freezing point depression is a type of solution property that depends only on how many solute particles are in a solvent, not on what kind of particles they are. This happens because the solute particles get in the way of water molecules forming ice. The key idea is that the more solute you add, the lower the freezing point becomes.
This is why road salt melts ice and why ice cream can be made. In ice cream, sugar or salt is added to the mixture to keep it soft and scoopable even when it's cold. When you add sugar or salt, the particles mix in and block the water molecules from lining up neatly.
This makes it harder for ice to form, so the solution stays liquid at lower temperatures than pure water would.
